In partnership with Plant & Food Research, a global technology scan was conducted to explore innovative baking technologies and assess their relevance for New Zealand. The study identified baking as the most energy-intensive process step, with gas-fired ovens as the primary source of emissions. Technologies were evaluated and ranked based on energy savings, emissions reduction, and investment cost. These rankings offer insights for both current and future opportunities, including projections for 2030 to align with national climate targets.
